It’s almost 3 weeks into this batch’s second fermentation cycle, it will continue to ferment for 5 or 6 more weeks before it’s put into bottles to go through the third fermentation cycle.

SWEET! What I’m wondering though, is how to make kombucha beer? When I bottle mine, it is full of carbonation and tastes almost like beer. Is there a way to simply bring up the alcohol content up a few notches to around 6%, without taking out the carbonation?
